Wonder cake

Made Mum's birthday cake tonight, extremely happy with the results. Although the proof will be in the tasting.

The gingerbread came out of hiding today and I was so disappointed. It's dry and not at all the sticky loaf I was hoping for, it looked better a week ago...wish I'd have cut into it then!! Won't be making that mistake twice.
