Perfect for a summer's day

Joking of course. It is so wet and soggy it could be the middle of winter.

These are destined to be shredded and mixed with a dressing of fish sauce, maple syrup and lime juice. Trust me it does work! Isn't the beetroot pretty? I found these at Edinburgh farmers' market.
